Okra Masala

Serves : 2 persons
Preparation Time : 10 mins
Cooking time : 10-15 mins.

Ingredients:
-----------
1. Mustard Seeds - 1 tsp.
2. Cumin Seeds -1 Tsp.
3. Shredded Coconut - 2 Tsp.
4. Red Chillis - 2 nos.
5. Asafoetida Powder - 2 Pinch
6. Salt to taste
7. Cooking Oil - 2 Tsp.
8. Okra - 200 gms.



Method:
------
1. Prepare the Paste: Grind 2 Tsp. Shredded Coconut, 1 Tsp. Cumin Seeds, 2 nos. of Chillis and make it to paste

2. Prepare the Okra : Wash and dry the Okra. Cut the stem end and tail end of the okra and slice it crosswise. To reduce the slimy, microwave the okra for 2 mins. before cooking.

3. Seasoning: Heat the 2 Tsp. of Oil in the pan. Add Mustard seeds. Wait till it splutters. Then Add 2 pinch of Asafoetida powder.

4. Blend: Add the sliced okras and fry it for 8-9 mins. Then add Coconut, Cumin seeds and Chillies paste. Fry it for another 3 mins.

Tasty Okra Masala is ready to serve. It goes well with Lemon rice, Tamarind rice or with any tangy curry.

Black Chickpeas Curry

Serves : 3 Persons
Preparation Time: 25 mins
Cooking Time : 30-35 mins

Ingredients
------------
1. Pre- soaked Black Chickpeas - 1 Cup
2. Garlic - 3 Cloves
3. Ginger - 1 Inch
4. Large Onion - 1 (Chopped)
5. Tomato - 1 (Chopped)
6. Shredded Coconut - 1 Tsp.
7. Cashews - 6 nos.
8. Fennel Seeds (Sombu) - 1 Tsp.
9. Chilli Powder - 1 Tsp.
10. Coriander Powder - 1 Tsp.
11. Salt to Taste
12. Turmeric Powder - 1/2 Tsp.
13. Coriander Leaves to garnish
14. Cooking Oil - 2 Tsp.
15. Garam Masala - 1/2 tsp. (Optional)



Method :
--------
1. Crush the 3 cloves of Garlic & 1Inch of Ginger and make it to paste

2. Grind the 1 Tsp. of Shredded Coconut, Cashews (6 nos), 1 Tsp. of Fennel Seeds and make it to paste

3. Prepare Black Chickpeas:
~Soak the Chickpeas over night or soak it for 7 - 8 hrs.
~Add 1 cup of pre-soaked Black Chickpeas, 1 cup of water, 1 Tsp. of Salt to the pressure cooker. Let it cook for 10-15 mins.

4. Prepare the Masala:
~Heat 2 Tsp. of cooking oil in the pan. Add 1 chopped large onion and fry it till it becomes transparent. This will take 10 mins. Add 1/2 Tsp. of salt to speed up the cooking.
~Add Ginger Garlic paste and fry it for 5 more mins or until the raw smell disappears.
~Add 1 chopped Tomatoes. I use vine Tomatoes as it gets cooked soon. Cook it for another 6 mins.
~Add dry masala powders one by one. Add 1/2 Tsp. of Turmeric Powder, 1 Tsp. of Chilli powder, 1 Tsp. Coriander powder and cook it for another 2 mins.

Tip: At this point add little water to prevent the masala gravy sticking to the bottom of the pan.

5. Blend:
~Add Black Chickpeas to the masala and blend it well. Let it cook for 10 more mins.
~Add Coconut, Fennel seeds and Cashews paste to the gravy. Let it boil for 5 more mins.

6. Optional:
~Add 1/2 tsp. of Garam Masala Powder to the Curry.

7. Garnish:
~Finally Garnish it with coriander leaves.

Tasty, Healthy Black Chickpeas Curry is ready to serve. It goes well with Rice, Dosa, Chappathi and Poori.

Lemon Rice / Lime Rice

Ingredients
------------

1. Rice - 1 cup
2. Water - 2 cup
3. Lemon - 2
4. Green Chilli - 2 nos.
5. Mustard Seeds - 1 tsp.
6. Chana Dal - 2 tsp.
7. Urad Dal - 2 tsp.
8. Peanut - 1 handful
9. Asafoetida powder / Hing powder - 1/2 tsp.
10. Turmeric Powder - 1/4 tsp.
11. Coriander Leaves - 1/4 tsp.
12. Cooking Oil - 1 Tsp.
13. Salt to taste.
14. Curry Leaves

Method :

1. Prepare the rice : Add 1 cup of Rice, 2 cups of water, 1 tsp. of salt. Let it cook for 10 - 15 mins.
2. Prepare the sauce : Squeeze 2 lemons and take out the juice. Add 1/4 tsp. of salt to the juice.
3. Seasoning : Heat the oil in the pan. Add mustard seeds. Wait till it crackles.
~ Then add 1/2 tsp. of Asafoetida powder. Reduce the flame.
~ Add Curry Leaves and chopped green Chillis.
~ Add Peanuts, Chana Dal, Urad Dal. Fry it for 1-2 min at low flame.
~ Add 1/4 tsp. Turmeric powder. Fry it for 1 more min or until the raw smell disappears.
4. Blend : Add the seasoning to the cooked rice. Then add lemon sauce to it. Blend it well.
5. Garnish : Finally garnish the lemon rice with coriander leaves.

Easy Tasty Lemon rice is ready to serve. It goes well with pickle or any fried vegetables.
